Roasted Heirloom Tomatoes and Clarified Heirloom Tomato Broth give richness and flavor to chili in no time. Make it vegan by substituting vegan ground meat such as Impossible or Beyond Meat. Serve with rice, tortillas, or chips and your favorite garnishes. Add Roasted Tomato Salsa Verde for brightness.

Step 1

Heat liquid from jar of Oven-Roasted Tomatoes on medium-high heat in large Dutch oven. Add the ground meat and cook, breaking it up with a wooden spoon, until fat has mostly rendered and it is nicely browned, about 10 minutes.

Step 2

Add the onion, garlic, oregano, and salt. Cook, stirring frequently, until the onions have softened, about 2 minutes. Add the chipotles, cumin and chili powder, and cook, stirring frequently, until the spices are aromatic, about 1 minute. Add the tomato paste and cook, stirring frequently, about 1 minute.

Step 3

Add chopped tomatoes and scrape up any brown bits that have stuck to the pan. Add beans, 2 cups broth or water, and stir to combine. Bring to a boil, reduce to a simmer, and cook, stirring occasionally, until flavors have developed and chili is thickened to desired consistency, about 30 minutes. Adjust texture by adding water, and season to taste with salt and pepper. Serve with whatever garnishes you like.

(16-ounce) jar Oven-Roasted Heirloom Tomatoes, liquid separated and tomatoes roughly chopped

(16-ounce) jar Clarified Tomato Broth or 2 cups broth or water
Garnish with avocado, sour cream, or Salsa Verde
