Blissfully Easy Flatbread

Whip up this easy flatbread and top with Oven-Roasted Heirloom Tomatoes for an easy and savory appetizer!
In a large bowl, mix together Greek yogurt, flour, baking powder, and salt until a dough has formed.
Knead for about 5 minutes, then split into 8 pieces. Shape each piece into a circle and roll out with a rolling pin. Place a towel over the flatbreads and let rise for 15 minutes.
After rising, heat the olive oil in a large cast iron skillet. One at a time, lightly fry the flatbreads until golden brown on both sides.
To serve, top with cheese and Oven-Roasted Heirloom Tomatoes.
