Smoked Tomato Rice

Mix Oven-Roasted Heirloom Tomatoes with your favorite rice for a smoky side or add some shrimp for an easy main dish.
In a large skillet, heat the olive oil over medium high heat until shimmering. Add the shallot, garlic, paprika, and fresh thyme and cook until fragrant, about two minutes.
Add the rice and Oven-Roasted Heirloom Tomatoes and stir to coat. Cook for 5 minutes, until rice is beginning to stick to pan. Sprinkle with additional fresh thyme and serve.

1shallot, thinly sliced
3cloves garlic, thinly sliced
2tsp. smoked paprika
2sprigs fresh thyme
3cups white or brown rice, cooked and drained
116 oz. jar Roasted Heirloom Tomatoes
