Ten-Minute Smoked Tomato Rice

Mix Oven- Roasted Heirloom Tomatoes with your favorite rice for a smoky side or add some shrimp for an easy main dish.

Step 1

In a large skillet, heat the olive oil over medium high heat until shimmering. Add the shallot, garlic, paprika, and fresh thyme and cook until fragrant, about two minutes.

Step 2

Add the rice and Oven-Roasted Heirloom Tomatoes and stir to coat. Cook for 5 minutes, until rice is beginning to stick to pan. Sprinkle with additional fresh thyme and serve.
