Heirloom Tomato Noodle Soup

Roasted heirloom tomato soup and golden brown noodles make a quick and luscious meal. Serve with a variety of garnishes so every one can make it their own.

  • Step 1

    Heat a dutch oven over medium heat and add oil. 

  • Step 2

    Add noodles to the pot and toast in oil, stirring often until evenly and lightly browned about 3-5 minutes. Reduce the heat to low and add Heirloom Tomato Soup plus up to one cup of water. Cook until noodles are tender, about 15-20 minutes.  

  • Step 3

    Meanwhile gather soup toppings. When noodles are cooked through, ladle soup in bowls and serve.

    fideo noodles or any thin pasta broken into 1-2 inch pieces
  • 1/4 cup
    neutral oil, such as grapeseed oil
