Cauliflower Bliss Bites with Oven-Roasted Heirloom Tomato Dip

Turn cauliflower into the perfect appetizer with a zingy dip made with Oven-Roasted Heirloom Tomatoes.
Preheat oven to 425 and put a cooling rack inside of a sheet tray. Set aside.
Dip the cauliflower into the egg, then into the panko breadcrumbs. Season with salt and pepper, and bake for 10 minutes, or until golden brown.
Meanwhile, pulse the Oven-Roasted Heirloom Tomatoes and harissa paste together in a blender until roughly chopped.
Sprinkle with parsley, if using, and serve with cauliflower.
1head of cauliflower, split into florets
1cup of panko breadcrumbs
salt and pepper
1cup of Oven-Roasted Heirloom Tomatoes
4Tbsp. of harissa paste
parsley, for garnish, optional
