Creamy Heirloom Tomato Dip

Jazz up an easy yogurt and cream cheese dip with Oven-Roasted Heirloom Tomatoes, garlic, and shallots.
In a glass bowl, pour juice from Oven-Roasted Heirloom Tomatoes over shallots and grated garlic and let marinate for at least 20 minutes or up to an hour.
In a food processor fitted with a metal blade, puree the cream cheese, yogurt, shallots, garlic, crushed red pepper flakes, and Oven-Roasted Heirloom Tomatoes. Stir in the scallions.
Place in serving dish and top with parsley, optional. Serve with crackers, bread or vegetables.
