Curried Vichyssoise

Bring a modern, dairy-free take to a classic chilled french soup. We love it with our award- winning Masala Heirloom Tomato Soup has a velvety, creamy texture on its own. Simply puree with potatoes and chill for an elegant beat-the-heat dinner.

  • Step 1

    Pour soup and 1/2 cup of water in a large pot and bring to a boil. Add potatoes, lower the heat and simmer until potatoes are cooked through - about 30 min. 

  • Step 2

    Once potatoes are cooked through, puree the soup with an immersion or stand alone blender until smooth. For extra silk texture pass through a sieve. 

  • Step 3

    Let soup come to room temperature and then chill before serving. Divide among 4 bowls and sprinkle with chopped chives.
