Curried Vichyssoise

Bring a modern, dairy-free take to a classic french soup. With a velvety, creamy texture, this two-ingredient recipe makes an elegant appetizer, lunch or special meal.

  • Step 1

    Pour soup and 4 oz water in a large pot and bring to a boil. Add potatoes, lower the heat and simmer until potatoes are cooked through - about 15 min. 

  • Step 2

    Once potatoes are cooked through, puree the soup with an immersion or stand alone blender until smooth. For extra silky texture pass through a sieve. 

  • Step 3

     Divide among 4 bowls and sprinkle with chopped chives. 


    Note: soup can be served chilled. SImply let soup come to room temperature and then chill before serving.
