Heirloom Gazpacho Andaluz

Soak bread in Tomato Bliss to completely absorb the deep tomato flavor. Cucumber and bell pepper bring the crunch; serrano adds clean, trailing heat. Bright, smooth and lightly creamy without being heavy. Built for make-ahead service, tastes great after a good chill.

  • Step 1

    Combine bread and Tomato Bliss and let sit until the bread is fully saturated with no dry spots left.

  • Step 2

    Transfer the Tomato Bliss and bread mixture to a blender. Add cucumber, bell pepper, and serrano chile, if using. Blend on high until the soup is fully smooth and evenly colored with no visible vegetable pieces.

  • Step 3

    Transfer to a container for refrigeration and stir in the minced herbs and kosher salt, to taste. Cover and refrigerate for at least 2 hours or overnight. 

  • Step 4

    Stir soup and top with diced cucumber and bell pepper, plus cracked black pepper. Finish with a light drizzle of olive oil or a touch of sherry vinegar if desired.

    kosher salt, plus more to taste
  • 2 tbsp
    finely minced flat-leaf parsley or chives
  • for serving: diced cucumber, diced bell pepper, cracked black pepper
