Mark Bittman's tomato ginger jam epitomizes the perfect sweet, spicy and savory jam. Here is a riff on his classic. Roasted Heirloom Tomatoes bring savory depth. Served with goat cheese or any favorite, this jam is the perfect appetizer to share with a loved one.

  • Step 1

    Combine all ingredients in a heavy small saucepan, Bring to a boil over medium heat, stirring often.

  • Step 2

    Reduce heat and simmer, stirring occasionally, until mixture has the consistency of thick jam, about 45 minutes. Taste and adjust seasoning.


  • Step 3

    Let cool for about 15 minutes. Then served with goat cheese or any soft cheese on your favorite cracker.

  • Step 4

    Refrigerate until ready to use. This will keep at least a week.
