Heirloom Tomato Orzo with Greek Feta

Cook orzo in Tomato Bliss for a creamy, heirloom tomato pasta dish - wonderful warm or chilled. Orzo, like risotto, releases starch to naturally thicken a dish as it cooks. In this version, Tomato Bliss does the heavy lifting, orzo builds the body, and feta finishes the seasoning. 

  • Step 1

    Pour Tomato Bliss into a heavy-bottomed pot and bring to a full simmer over medium-high heat, about 6 to 8 minutes.  Add orzo, return to a gentle simmer, cover, and reduce heat to medium-low.

  • Step 2

    Cook for 18 to 20 minutes, stirring occasionally, until the orzo is fully tender and the soup leaves a brief trail when a spoon is dragged across the bottom of the pot.
    Add warm water in small increments, as needed to maintain a loose, spoonable consistency.

  • Step 3

    Once orzo is tender and soup has thickened, season with salt and pepper. Optional: stir in cream for a softer finish.

  • Step 4

    Finish with parsley, crushed red pepper, and feta just before service.
