Curried Heirloom Tomato and Potato Soup

Earthy and flavorful, creamy and comforting. This satisfying soup is ready in less than an hour.

  • Step 1

    Heat oven to 450 degrees. Toss potatoes with olive oil, curry powder, salt and pepper. Roast until tender, 20-30 minutes.

  • Step 2

    While potatoes roast, warm Tomato Bliss gently over medium heat with milk. Add roasted potatoes. Puree with immersion blender or, working in two batches, in blender. Add 1/4 cup water or extra Tomato Bliss as necessary to adjust consistency. Serve.
