Heirloom Tomato, Zucchini, and Corn Gazpacho
Serve this summertime Heirloom Tomato Zucchini and Corn Gazpacho in under 30 minutes! Turn simple ingredients into a gourmet flavor trip. Fresh corn and zucchini from the farmers market combined with Tuscan Heirloom Tomato Soup make an easy weeknight meal.
Combine the zucchini, salt, pepper, and corn in a bowl. Toss, then set aside to marinate (refrigerate if leaving for more than 10 minutes).
Pour the soup into the serving bowl.
Top with zucchini and corn, then enjoy!

1zucchini, thinly sliced with vegetable peeler
2ears of corn, charred on the grill
salt and pepper
