Heirloom Tomato, Zucchini, and Corn Gazpacho

Serve this summertime Heirloom Tomato Zucchini and Corn Gazpacho in under 30 minutes!

  • Step 1

    Combine the zucchini, olive oil, vinegar, salt, pepper, and corn in a bowl. Toss, then set aside to marinate (refrigerate if leaving for more than 10 minutes). 

  • Step 2

    Pour the soup into the serving bowl.

  • Step 3

    Top with zucchini and corn, then enjoy!
