Marinate a block of feta in Oven-Roasted Heirloom Tomatoes for the perfect appetizer or crumble over a salad, pasta or any protein.
Wash lemon and zest or peel yellow part of the lemon with a vegetable peeler, leaving white pith.
In a small saucepan, combine lemon peel, Oven-Roasted Heirloom Tomatoes, and red pepper. Warm over the lowest heat setting for 15 minutes.
Pour over feta cheese and let marinate for fifteen minutes or longer. Serve with bread, crackers or raw vegetables such as carrots, bell peppers and celery.
