Oven-Roasted Heirloom Tomatoes VegetarianMarinate a block of feta in Oven-Roasted Heirloom Tomatoes for the perfect appetizer or crumble over a salad, pasta or any protein.
Step 1
Wash lemon and zest or peel yellow part of the lemon with a vegetable peeler, leaving white pith.
Step 2
In a small saucepan, combine lemon peel, Oven-Roasted Heirloom Tomatoes, and red pepper. Warm over the lowest heat setting for 15 minutes.
Step 3
Pour over feta cheese and let marinate for fifteen minutes or longer. Serve with bread, crackers or raw vegetables such as carrots, bell peppers and celery.
