Pan-roast halibut with Oven-Roasted Heirloom Tomatoes for an elegant and savory dinner. Serve with rice or cauliflower rice.
In a medium skillet over medium heat, heat olive oil until shimmering. Add white onion, garlic, and red pepper. Saute for about 5 minutes, or until onion starts to weep.
Add oven-roasted tomatoes to the pan, and bring to a simmer.
Add the fish and cover the skillet. Cook for 6 minutes, or until flesh has become opaque.
Top skillet with sliced avocado and cilantro.
2Tbsp. olive oil
1/2white onion, thinly sliced
3cloves of garlic, thinly sliced
1tsp. red pepper flakes
116 oz jar of Oven-Roasted Hierloom Tomatoes
1/2lb. of halibut or cod
1avocado, pitted and sliced thinly
cilantro, for garnish
