Oven-Roasted Heirloom TomatoesPan-roast halibut with Oven-Roasted Heirloom Tomatoes for an elegant and savory dinner. Serve with rice or cauliflower rice.

Step 1
In a medium skillet over medium heat, heat olive oil until shimmering. Add white onion, garlic, and red pepper. Saute for about 5 minutes, or until onion starts to weep.
Step 2
Add oven-roasted tomatoes to the pan, and bring to a simmer.
Step 3
Add the fish and cover the skillet. Cook for 6 minutes, or until flesh has become opaque.
Step 4
Top skillet with sliced avocado and cilantro.
