Pulled Chicken with Tangy Heirloom Tomato Barbecue Sauce

For an excellent pulled chicken sandwich, slowly simmer skinless chicken thighs in Roasted Heirloom Tomato Soup mixed with a bit of brown sugar or honey.  Please a wide range of hungry eaters with this set-it-and-forget-it, gourmet recipe.

  • Step 1

    In a large pot or dutch oven, bring soup and brown sugar (or honey) to a gentle simmer over medium low heat. Stir every few minutes until sugar is dissolved. 

  • Step 2

    Add chicken thighs. Reduce heat to low and simmer, covered, until the chicken is cooked through., about 1.5 hours. Stir in peppers and cook about 5 minutes longer, until peppers just turn tender.

  • Step 3

    Using fingers, pull meat off bones. Fill buns, garnish with green onions, and serve.
