Oven-Roasted Heirloom Tomatoes VegetarianEnjoy a savory pasta dinner in minutes with Oven-Roasted Heirloom Tomatoes.
Step 1
Boil pasta in salted water according to package directions. Reserve 1 cup of pasta water.
Step 2
While pasta is cooking, saute garlic in olive oil until fragrant in a large skillet over medium heat. Do not let garlic brown.
Step 3
Add Oven-Roasted Heirloom Tomatoes to garlic and stir to combine. Remove from heat and pulse in blender with anchovies and 1 cup of reserved pasta water until smooth.
Step 4
Combine sauce and olives with pasta. Garnish with parsley and serve.
