Savory Oatmeal Inspired by Blue Zones Community

Oatmeal, packed with colorful Roasted Heirloom Tomatoes, greens and nuts delivers a healthy and savory breakfast. Double-down on the savory flavor and superfood health by using Clarified Heirloom Tomato Broth instead of water. Recipe inspired by the Blue Zones community members Matt Frazier and Stepfanie Romine.

  • Step 1

    Combine the oats and carrot or beet in a small saucepan over medium heat. Add the Clarified Heirloom Tomato Broth or water. (Use more or less to achieve the consistency you prefer; 1½ cups yields a fairly thick oatmeal.)

  • Step 2

    Heat until simmering, then cook, stirring often, until everything is tender, about 5 minutes.

  • Step 3

    Stir in the greens, tomatoes, and nutritional yeast or cheese.

  • Step 4

    Pour into a bowl and top with the avocado and walnuts. Season with salt and pepper to taste, and serve.
