Oven-Roasted Heirloom Tomatoes soup VegetarianBlitz Oven-Roasted Heirloom Tomatoes and lightly sautéed onion in a blender for a savory soup.
Step 1
In a saucepan, warm 2 tablespoons of liquid from Roasted Tomatoes over medium heat. Add onion and garlic, and sauté until fragrant, about five minutes.
Step 2
Add Oven-Roasted Heirloom Tomatoes (and remaining liquid) and stir. Season with salt, pepper, and smoked paprika. Cook for about five minutes, then add mixture to a blender or use an immersion blender. Blitz until smooth and pour back into saucepan.
Step 3
Stir cream into soup, if using, then serve.
