Step 1
Heat oil over medium heat. Add red pepper flakes and cook 60–90 seconds until fragrant. Pour in Tomato Bliss and cook 3–4 minutes to thicken slightly.
Step 2
Stir in lentils and water. Partially cover and bring to a simmer. Continue simmering 18–22 minutes, stirring occasionally, until lentils dissolve and the soup thickens to a loose porridge texture.
Step 3
Remove from heat and salt to taste. Let sit a few minutes to thicken slightly.
Step 4
Mix lemon zest, oregano (or za’atar), and a pinch of salt. Rub together until fragrant and place on top. Serve with goat cheese or yogurt if desired.
